做法(fǎ ):春(chūn )笋(sǔn )切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
