做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
