做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
