做法:春(chūn )笋切成片后加(jiā )少(shǎo )许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
