做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火煲一个半小时(shí ),下盐调味即可(kě )品尝。
