做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加(jiā )入(rù )少量(liàng )清(qīng )水半(bàn )掩住春笋,盖上锅盖(gài )大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
