做法:春笋切(qiē )成片后(hòu )加少许盐(yán )捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁(zhī )时盖上(shàng )锅盖焖。
