做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
