做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂(liè )一小块(kuài )姜,热锅,用姜块在锅上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小(xiǎo )时(shí ),下(xià )盐调味即可品尝。
