做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少量清水半(bàn )掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
