做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜块(kuài )在锅上(shàng )擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
