做法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用(yòng )清水浸(jìn )泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖(gài )上锅(guō )盖焖。
