做法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干(gàn )的(de )时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖(gài )焖。
