做法(fǎ ):春笋(sǔn )切(qiē )成片后加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
