做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
