做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
