做法:春笋(sǔn )切成片(piàn )后加(jiā )少(shǎo )许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
