做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和(hé )薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜块在锅(guō )上擦(cā )一遍(biàn ),放两勺油(yóu ),待油六成热下(xià )鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲(bāo )一个半(bàn )小时,下盐调(diào )味即可(kě )品尝。
