做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的(de )时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
