做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油(yóu ),放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
