做法:春笋切成片后加少许盐捞出后(hòu )用清水浸(jìn )泡(pào ),生姜切(qiē )片(piàn ),葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
