做法:洗净宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦(cā )一(yī )遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调(diào )味即可品尝。
