做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀(yún ),加(jiā )入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
