做法:春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
