做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
