做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖(gài )焖。
