做(zuò )法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热(rè )锅(guō ),用姜块在锅(guō )上(shàng )擦一遍,放两(liǎng )勺(sháo )油,待油六(liù )成热下(xià )鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转中小火煲一个(gè )半小时,下盐调味即可品尝。
