做(zuò )法:春(chūn )笋切(qiē )成(chéng )片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入生(shēng )姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
