做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均(jun1 )匀(yún )稍收(shōu )汁时盖上(shàng )锅盖焖。
