做法:春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
