做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
