做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
