做(zuò )法:春(chūn )笋切(qiē )成(chéng )片后加(jiā )少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
