做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后(hòu )用(yòng )清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。
