做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡(pào )软,拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六(liù )成(chéng )热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火(huǒ )煲一个半小时(shí ),下盐调(diào )味(wèi )即可品尝。
