做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时,下(xià )盐调(diào )味即可品尝(cháng )。
