做法:洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清(qīng )水把(bǎ )陈皮泡软(ruǎn ),拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清(qīng )水,放入煎煮好的鲫鱼和其他材料(liào ),武(wǔ )火煮沸,转中小(xiǎo )火煲(bāo )一个半小时(shí ),下(xià )盐调味即可品尝。
