做法(fǎ ):春笋切(qiē )成片后(hòu )加(jiā )少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
