做法:春笋切成片后加少许(xǔ )盐(yán )捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖焖。
