做(zuò )法(fǎ ):春笋切成片后(hòu )加(jiā )少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
