做法:春(chūn )笋切(qiē )成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
