做法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油(yóu ),放入生(shēng )姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖上锅盖(gài )焖。
