做法:春笋切成(chéng )片后加少许盐(yán )捞出后(hòu )用清(qīng )水浸(jìn )泡(pào ),生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅盖焖。
