做法(fǎ ):春笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖。
