做法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
