做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
