做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅盖焖。
