做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时候(hòu )加入盐,翻(fān )炒均匀稍收汁(zhī )时盖(gài )上锅(guō )盖焖。
