做(zuò )法(fǎ ):春笋(sǔn )切(qiē )成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
