做法:春笋切成片后加(jiā )少(shǎo )许(xǔ )盐(yán )捞出后用清水浸(jìn )泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
